Sergio Polakof is a researcher director (senior scientist) at the French National Institute for Agriculture, Food and Environment Research (INRAE), within the Human Nutrition Unit (UNH, UMR1019) of the INRA Human Food department (AlimH). He obtained his European doctorate in 2008 in the specialty « Physiology and Metabolism » at the University of Vigo (Spain).
His training in Endocrinology, Metabolism, then in Nutrition guided his research activities in the field of the exploration of metabolism disorders. His research theme focuses on the understanding the mechanisms leading to the development of nutrition-related chronic metabolic diseases occurring during ageing such as obesity, diabetes, and metabolic syndrome. He is particularly interested in understanding how people respond to specific diets or dietary challenges in order to define groups of individuals who can benefit from Precision Nutrition preventive strategies.
The ultimate goal is to be able to develop tailored nutritional strategies capable of preventing or slowing down these metabolic disturbances in order to promote a healthier ageing.
He is the author of more than 80 international publications and more than 20 book chapters. He participates in the teaching of metabolism and nutrigenomics in France and in several universities in Europe and South America.
